Fried Rice is one of those dishes that is easy to get wrong but when cooked the right way, is one of the most effortless and customisable dishes for Plant Based Foodies, Packed full of Healthy Carbs, Fibre and Protein, this meal doesn’t just deliver on taste – it’s a nutritional power house too. This is what you will need to make this delightful dish:

  • 1 Cup (240g) of Wholegrain Brown Rice – White is fine too but generally is a less healthy alternative to it’s Brown equivalent
  • Coconut Oil
  • Sesame Oil (Optional)
  • Cashews (Optional)
  • MSG – Monosodium Glutamate (this is optional but really gives the dish that Asian inspired flavour)
  • 2 or 3 Cloves of Garlic Crushed
  • 1 Teaspoon of Salt
  • Soy Sauce
  • Your Vegetables of Choice – I like to add chopped up broccoli florets to keep it simple

To begin with, you will want to wash the rice. This removes any excess starch and is key to stop the rice clumping together when you fry it. Once washed, drain off any excess water and add two cups of fresh clean COLD water. Bring the rice to a roaring boil and allow to boil uncovered for 2 Minutes. After that, place a lid over the pot and turn the heat right down to a simmer – set a timer for 20 minutes.

While this is cooking, now would be a good opportunity to prepare any vegetables or Meat Replacements you intend to add to your meal.

Once the rice has cooked, leave the lid on for a further 30 minutes. This is an important step to fully cook the rice. The longer you leave the rice covered for, the better it’s finish will be.

Heat some coconut oil in a Wok and add the rice. If you don’t have a Wok you can use a Large Pan or Skillet but generally the Wok will cook much more evenly. Stir your rice making sure not to let it burn. Add your Garlic to the rice, crushed preferably but diced will work fine. Stir often to stop the garlic from burning too – you only want to roast it to release the flavour.

After several minutes add in the remainder of the ingredients except the Sesame Oil. Stir in your vegetables and “Meat” and allow a few minutes for the heat to work through, stirring often. Once you are satisfied the food is heated thoroughly, add your Sesame Oil. It’s important to add the oil last; it merely serves as a flavour enhancer and garnish for your Fried Rice.

This dish never fails to impress my friends and family and with the right Meat Replacement, most assume it is simply leftover Chinese Takeaway. It really is that good.
